Chef William Dissen is known in Asheville as the Executive Chef and Owner of The Marketplace Restaurant on Wall St. downtown. A restaurant that is famous for its farm-to-table cuisine, with a focus on local, seasonal, and sustainable food sourced from the foodshed of our region. Named as one of America’s “Most Sustainable Chefs” William is also known as the first chef to defeat Gordon Ramsay on National Geographic’s Gordon Ramsay: Uncharted, and has been twice named Fortune Magazine’s Green Chef of the Year.

So it should come as no surprise that Forbes magazine included Chef Dissen in their recent article, “From Beetroot to Barbeque, These Chefs Create Delectable Dishes”.

Dissen explains to Forbes, “Through our work, we have helped to establish access to the best ingredients in the United States’ western Appalachian region. Growing up in West Virginia I had the opportunity to explore the mountains and valleys, and to get in touch with nature. At our restaurants, we work with a plethora of wild and indigenous ingredients that are grown and from the area.”
